DESCRIPTION
Honey of the rocky cliffs. At the faraway island of Kalymnos, the Kopanezos family -thyme-seekers- mount their beehives on weathering rocks: at first, on spots blessed with the first bloom, and as the summer weighs in, beehives move to meet the late blooming thymes. Bees feast on sea-drenched thyme fields rich in nectar. Their honey: an untamed thoroughbred.
TASTE/SERVE:
Thick texture, thick tastiness and thick wild thyme aroma. Raw as a topping to many sweets, spread on the breakfast slice of bread, though also great for cooking and dessert preparations.
