DESCRIPTION
“Good things take time”, reads the old well-known quote and the exceptional olives of Michalis Ainatzoglou are a great token of it: They debitter and mature naturally for a great length of time, pure from any chemical interference. Thick and fleshy, they embody the tastiness of their local natural environment, as well as the finesse of the Greek gastronomic culture. They stand out for their large size, characteristic of the Prune Variety (Damaskinoelia), which most likely descents from the ancient Greek variety of “Orchas”or “Orchemon”. The preparation of the olives involves the ancient-old method of carving and maturing in brine.
TASTE/SERVE:
Fruity, tangy taste, with a mild bitterness and blonde color. Great to try in all sorts of green salads, in the Peloponnesian-style potato salad with oranges and onions, or in salads with legumes and fruits. Work also great in red meat sauces, in pasta sauces, in sandwiches with fine Greek cheeses.
